This is very delicious

Ingredients
- 2 wedges Ice Berg Lettuce
- 5 Halved Cherry Tomatoes
- 4 Strips Chopped Bacon
- 2 Tsp Diced Red Onion
- 1/4 Cup Diced Cucumbers
- 2 Tbl Croutons
- 2 Tbl Blue Cheese Crumbles
- 2 Tbl Blue Cheese Dressing
- 1 Inch Thick Strip New York Steak
I prefer my steak medium rare and my bacon chewy, I know not everyone appreciates the true flavor of food, but my guidelines are for cooking them to my liking, cook them longer to reach your desired temp.
- First and most importantly wash your hands and wash your produce.
- Take out the steak, salt and season to taste and leave out while covered for up too half an hour to get it to room temperature and allow the salt to bring out as much moisture from the steak. This is a kind of speed run of dry aging and really helps to bring out the meaty flavor of the steak
- Preheat oven to 350*
- Cut your ice berg into eighths, place two wedges per salad
- Halve 5 cherry tomatoes and place along wedges
- Dice some red onion and sprinkle over wedges
- Dice some cucumber and sprinkle over wedges
- Sprinkle croutons over wedges
- Using an oven safe skillet place bacon on medium heat, allow the skillet to heat up along with the bacon
- Cook bacon to desired temp, use cation, bacon goes from chewing to over cooked rapidly
- Pull bacon from skillet, leaving grease in skillet
- Place bacon in a bowl to allow to drain excess grease and cool a bit
- Using hot skillet with bacon grease, sear each side of New York steak over high heat for about 45-60 seconds
- Using tongs sear edges of steak for 30 seconds, allowing 45 seconds for the fatty side
- Place seared steak on baking rack over a foil lined baking sheet
- Sprinkle steaks with blue cheese crumbles
- Place steaks in oven to reach desired internal temp, for me its 135* as I like it med-rare
- While steak is cooking, chop bacon into thin strips/bits and sprinkle over wedges
- Once steak reaches desired temperature, bring out of the oven and allow to rest for 3-5 minutes
- Slice steak and fan out on plate i front of the wedges and add a little more blue cheese to steak and salad
- Add blue cheese dressing to taste and enjoy.
